Easy Breakfast Roll-Ups -- egg is cooked flat like an omelet so it lines up with the tortilla. Also used sliced cheese. The goal is to keep the toppings relatively flat so it rolls up smoothly. (Picture shows baby spinach included. Could use any ingredient you would put in an omelet.)
